Colorless translucent crystal or white granule or white crystalline powder, often containing a molecule of water of crystal, odorless, very sour taste, soluble in water, alcohol, and ether. Its calcium salts are more soluble in cold water than in hot water, and this property is often used to identify and separate citric acid. Anhydrous citric acid can be obtained by controlling proper temperature during crystallization. An aqueous solution is acidic. It is slightly weathered in dry air and deliquescent in damp air. Decomposition above 175℃ releases water and carbon dioxide.

Used as experimental reagent, chromatographic analysis reagent and biochemical reagent, also used in the preparation of buffer solution. Used in the food industry especially as acidifiers, PH buffering agents, and preservatives with other compounds. It is an ideal substitute for phosphate in the detergent industry.
